Evie Mae's BBQ: Family business making its name

The line for Evie Mae's is filled with families, fans and BBQ connoisseurs.
"Heard this was a great place, came all the way from Ohio," one customer said.
Another came because he's read about it in Texas Monthly.
Some days, people are waiting a couple hours before the doors open.
"We will be opening right at 11, thank y'all so much for coming," an Evie Mae's employee told customers waiting in line.
"We started a BBQ trailer out here in Wolfforth and originally it was two days a week, we were open Wednesday and Thursday and that was February of 2015, when we started the trailer," Evie Mae's owner Arnis Robbins said.
Three months later, word of mouth had created a pretty steady following.
"It was in May, that the BBQ editor from Texas Monthly showed up to our trailer and he came and he came right as we opened and we served him and we didn't have another customer for maybe an hour," Robbins said. "I recognized him and went in and talked to him after eating and chatted a bit and he was pretty tight lipped about what we thought of everything, but it was exciting for us we felt like wow maybe we were discovered."
The next day, the editor posted about Evie Mae's in his Texas Monthly BBQ blog. "I mean literally 30 minutes later, we had people coming that followed him religiously and had seen the article and were excited that we were here, just outside of Lubbock," Robbins said.
By September of 2015, the Robbins' realized they needed to start thinking bigger.
"We had the opportunity to design and build this restaurant to our specs and I think they poured this foundation at the end of January of 2016 and we opened up here for our first day of service on April 28, 2016," Robbins said.
But Evie Mae's might not have happened if it hadn't been for a life changing diagnosis.
"I was diagnosed with celiac disease in 2011 and going back to getting into BBQ, celiac disease may have played as big of a part in me getting into BBQ as anything, because I wasn't able to eat out anymore and so I was able to spend more money on food to prepare at home and you know, I had always liked to grill but I had never dabbled anything beyond that," Robbins said.
While living in Tucson, Arnis took his passion and on a whim purchased a trailer.
"Now we were trying to sell BBQ and we were talking to our neighbors and our little girl Evelyn, we call her Evie and they suggested call it Evie Mae's that has a southern twang to it, it sounds the part," Robbins said.
Evie Mae's left Tucson, made it's way to Wolfforth and never lost its roots.
"It's been a crazy wild ride, but we feel so blessed and fortunate that we have been embraced and you know all we are trying to do is the best that we can every day with food quality and service and the fact that it is appreciated and received the way that it is, is just icing on the cake," Robbins said.
The Robbins' already have plans for expansion, to create a bigger dining area and to give their bakery its own kitchen.
"Our bakery is all gluten free, we make all of our desserts in-house and they are all gluten free," Robbins said.
Something that is very important to the Robbins' family.
"If we can't make it good gluten-free, we don't make it," Robbins said.
The new store front plans to be open by the end of the year.
